They are pleasantly crispy with delicate, mild and sweet taste. They are usually sold in 100 g packs of clumps, as they are pulled from the growing bottles. Enoki mushrooms are known as snow mushrooms or winter mushrooms since they are first discovered growing on mountains along the snow line. How to select Fresh Enoki mushrooms
Select firm-capped mushrooms with a fresh odor. It should not have sour smell.
The base of the clumps should be dry and delicately woodsy firm.
How to store
Refrigerate Enoki mushrooms in semi vacuumed original packages. It can be stored for about 10 days.
How to use
Trim stems of Enoki mushrooms and toss them raw in salads or garnish clear soup or stew. They can be stir-fried.
Cooking too long can make the stems tough and stringy.
